Waffle Omelet: The Amazing 8-Minute Meal

  • Two eggs
  • ¼ cup shredded or crumbled cheese of your choice (mozzarella, cheddar, feta, pepper jack, etc.)
  • ¼ finely chopped vegetables of your choice (broccoli, spinach, tomatoes, already cooked onions or bell peppers, etc.)
  • Salt and pepper
  • Cooking spray
  1. Spray the waffle iron with cooking spray. Set to preheat. If your waffle iron is like mine, it has various heat levels, choose the one you use for regular waffles.
  2. While the waffle iron preheats, beat your eggs and mix in your cheese and veggies. Salt and pepper to taste.
  3. When the waffle iron has fully preheated, pour the mixture onto the waffle iron and close. Set a timer for the same amount of time it takes to cook waffles (with my waffle iron this is 3 minutes).
  4. When the timer is done, pull off the waffle omelet and serve.
