10-Minute Flounder Bake & The 10-Day Cooking Challenge

Up until very recently one of the things that made me the most nervous in the kitchen was fish. I was terrified of messing it up. It felt so fragile and finicky. I was terrified that I would undercook it and I was terrified that I would overcook it. And, if I am being completely honest, there are certain fish that still scare me a little. But as I have experimented and tried different things out I have learned a couple of things:

  • Simple seasoning works well! Complicated marinades can be great but are not necessary. If you’ve got salt, pepper, and some lemon. You’re good to go.
  • The broiler or a hot oven is your friend. Quick, high heat cooking works really well for fish because it doesn’t dry it out.

The recipe I am sharing with you today is a great example of both of those rules. Just a little seasoning and a super quick, hot heat and dinner is ready! This recipe is so easy and so quick that it is perfect for those evenings when you get home late and aren’t sure what to do for dinner. 3 Ways to Use Up Vegetables Before They Go Bad

On Sunday I went to visit my in-laws who were preparing for a trip to Italy. As we were leaving, my mother-in-law presented me with baby spinach, red cabbage, broccoli, cauliflower, a bunch of zucchini, and two pints of blueberries that she wasn’t going to be able to use up. I was a bit reluctant to take it all since I knew my next farm share delivery was coming on Tuesday and I wasn’t sure how I was going to be able use it all up. But the idea of it all going to waste was too much for me to handle, so I agreed to take it. Then yesterday not only did I pick up my farm share, but a good friend also swung by with a gallon-sized Ziploc full of arugula that she wasn’t going to be able to eat. So suddenly I was absolutely drowning in produce, and some of it was on the verge of going off! But with a little thought and about an hour of time, I had taken are of much of it.
