Mediterranean Spinach Dip

Sometimes the best things are simple. Super simple. That was a lesson I was reminded of as I worked to develop a recipe for this Sabra hummus recipe contest organized by The Recipe Redux. You see, I kept trying to come up with some innovative, creative, blow-your-mind-surprising use of hummus. Hummus croquettes and sweet potato toast towers were two of the almost-blogworthy recipes I worked on. Both of them were good, both of them were kind of fun, but as I sat down to write about them I just couldn’t get inspired. And then yesterday it kind of hit me: I was just trying too hard. I was making things more complicated than they really needed to be. So I pushed those two recipes aside, perhaps I’ll come back to them at another time, and decided to keep things simple.

Honestly, when I stop to think about it, making things too complicated has been kind of a theme in my life recently, as well as the hope that I can instead simplify (please tell me I’m not alone in this struggle). This recipe was a wonderful reminder for me that simple is often better. That sometimes we have to let go of our over-inflated expectations for a more balanced reality that will actually make us happier, as is the case with this rockstar, super simple dip.

So in honor of National Hummus Day on May 13th, I give you my Mediterranean Spinach Dip. A super simple, vegetarian, plant-based protein powerhouse of a snack that takes all of 5 minutes to make. Everyone in my family went nuts for this one and an added bonus is that it is another opportunity to get vegetables into everyone’s diet without cajoling or reminding. It works really well with crackers or chips, but also with crudité. My husband also recommends using it as a spread in a sandwich. Haven’t tried this yet myself, but it sounds amazing! Enjoy!

Ingredients
  • 3 cups frozen spinach, thawed and drained
  • 1 cup Sabra Classic Hummus
  • ½ cup crumbled feta
  • 1 Tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon thyme
  • ¼ teaspoon black pepper
Instructions
  1. In a food processor, blender, or with an immersion blender, blend all the ingredients until smooth. Serve with vegetables, tortillas chips, or pita chips.

Shakshuka. Shakshuka is a dish that has been on my list of recipes to blog about for a long time now. When I first heard about shakshuka, a dish in which eggs are poached in a seasoned tomato sauce, I was not enthusiastic (as I have blogged about before, I tend to be a bit of an egg purist), but the dish just kept showing up in different places and was mentioned by chefs and bloggers that I respect and admire. So finally I decided to push myself out of my comfort zone and give it a shot. And, of course, it was delicious and super simple to make—a win, win!

But today I want to share with you and even simpler meal that I am calling Shakshuka Pizza. This is one of those meals that is great for a crazy weeknight when you have about 15 minutes to get dinner on the table but everyone is sick of quesadillas and grilled cheese….

A few years ago I was really desperate to find ways to get vegetables into my younger son. I had tried the battles, I had tried the pleading, and now I was trying to use the division of responsibility approach, which meant that I would choose what foods were offered but that he then would have the freedom to choose what he ate out of what was on the table and there would be no special meals or negotiations. What that meant for our family was that some nights I made a dinner that had vegetables on the side, which he almost never ate, and some nights I made a one-pot meal that included the vegetables in the dish. Often times he would pick around the vegetables, but sometimes I would find a dish that he loved so much that he would plow right through, not even noticing the vegetables.

There were two types of one-pot meals that tended to work for us. Soups and baked pastas. The kid loved (and still loves) pureed vegetables soups, which was very helpful when I felt like I was going to lose my mind. And while he would sometimes pick around the vegetables in a baked pasta, some strays would make it into his mouth and he was always cheerful when pasta was involved. Win-win. Wild Blueberry Flavor Burst Smoothie

The other night I stopped by a friend’s house and we got to lamenting the fruit selection at this time of year. The citrus is ok and sometimes you can find a good pineapple, but the apples are past their prime and berries are way out of season. In short, it is a bummer. So that is when I shared my secret to surviving the mid-winter fruit doldrums: frozen fruit! This is the time of year when I stock up on frozen berries each week and use them to mix into yogurt and oatmeal, bake them in desserts, and make smoothies. So when I was invited to participate in the Wild Your Smoothie Recipe Contest I was psyched because it meant I could share one of my absolute favorite smoothies made with my hands-down favorite frozen fruit: wild blueberries.

If you have never tried wild blueberries, you are missing out! They are what blueberries are supposed to taste like—a sweet and tart flavor explosion in your mouth! They have a much stronger blueberry flavor because the plants are wild and genetically-diverse with thousands of interlocking plants spreading naturally across fields called barrens. As I kid I loved picking wild blueberries, but they can be hard to find, so now I depend on the frozen version, which miraculously keep their flavor and nutrition since they are individual quick-frozen at harvest. The other perk of wild blueberries is that they have twice (!) the antioxidant capacity of the larger, cultivated blueberries and can help with gut health, diabetes, cancer, and brain health. Pretty amazing, right?! And here’s the best part: frozen wild blueberries are super easy to find since almost every grocery store has them!…

Growing up my family never really ate convenience foods. There were no freezer dinners, no hamburger helper, no pop tarts, and no hot pockets. I was always intrigued by those forbidden foods since the commercials made them looks so appetizing and my brother and I were definitely known to beg and plead to try them. Finally, when I was about 10 my mom agreed to let us get the boxed mac n cheese, but only if I was going to make it myself and only for special occasions, like when we had a babysitter.

As I got older I had the opportunity to try some of the other foods that I had salivated over for years and years and time and time again I found them to be highly disappointing. They always tasted sort of cardboardy and fake. And, yet, even today the allure of those foods that patiently wait for you in your freezer, ready to miraculously turn into a meal is a strong one. So, when I have the time, I try to stock my freezer with homemade versions. Slow Cooker Spring Vegetable Minestrone

Now that the weather is getting warmer and the days longer, getting around to making dinner is getting tougher and tougher. The pull to stay outside, to be out and about is just so strong. So I have been making a lot of dinners that can either be cooked very quickly, 5-20 minutes, on the stove or in the pressure cooker (my latest toy), or I have made one-pot dishes that can be prepared in the slow cooker.

So this week I want to share a new favorite in our house, a minestrone that takes advantage of the spring vegetables that are abundant at this time of year. I love this recipe because it is so quick to throw together, can withstand extra time in the slow cooker if needed, is chock-full of vegetables, and tastes like spring. My kids love it because it is cheesy, colorful, has noodles, and they can pick and choose their favorite veggies as they make their way through their meal….

Simple Grain Salad: A side dish without a recipe

One of the recommendations I often make to clients and in workshops is to “cook once, and eat two, three or more times.” Many times, life can get so busy that meal planning seems impossible and all we can do is try to quickly figure out the next meal—tonight’s dinner, tomorrow’s school lunch, etc. When we do that we are constantly searching for recipes and depending on our creativity, which can quickly burn us out and leave us resentful of having to cook at all. But, with a tiny bit of planning and maybe some flexibility we can turn one round of cooking into two or three simple meals.

One of my favorite ways to stretch the food I make farther is with a grain salad. If I am making a pot of grains—rice, quinoa, millet, couscous, etc.—I always make extra. So much can be done with leftover grains: you can turn them into breakfast porridge, throw them into a big green salad for some added heft, mix them into soups or stews, fold them into veggie burger batter, and, my favorite, turn them into a grain-based salad. Grain salads are great because they can serve as a hefty side dish and are so incredibly flexible—any leftover vegetables, cheese, or salad dressing you have lying around can get thrown in!…
