Shakshuka Pita Pizza

Shakshuka. Shakshuka is a dish that has been on my list of recipes to blog about for a long time now. When I first heard about shakshuka, a dish in which eggs are poached in a seasoned tomato sauce, I was not enthusiastic (as I have blogged about before, I tend to be a bit of an egg purist), but the dish just kept showing up in different places and was mentioned by chefs and bloggers that I respect and admire. So finally I decided to push myself out of my comfort zone and give it a shot. And, of course, it was delicious and super simple to make—a win, win!

But today I want to share with you and even simpler meal that I am calling Shakshuka Pizza. This is one of those meals that is great for a crazy weeknight when you have about 15 minutes to get dinner on the table but everyone is sick of quesadillas and grilled cheese….

Super Simple Slow Cooker Chili

Did you know that the night before Thanksgiving is one of the biggest nights for ordering pizza in the United States? I get why. I really do. Whether you are hosting, cooking to contribute to the big meal, or preparing to travel we all feel pretty overwhelmed on that Wednesday and so, for many of us, the last thing we want to do is think about what to make for dinner. And while I am a big fan of ordering pizza from time to time, it seems to me that with all of the indulging and overeating that is going to happen the next day, having a nutrient-packed meal the night before might actually be a good thing to help to keep our bodies (and spirits) in balance. Roasted Summer Vegetable Dip

We came home this week from our extended trip to Colorado to an overwhelming amount of produce to take care of. So in addition to getting the kids back into the swing of things at school and getting back into my normal rhythms, I have been trying to preserve lots of summer fruits and vegetables. To use up tomatoes, peppers, and other summer vegetables I usually go with a huge vat of skillet tomato sauce and then freeze the extra for the winter, but this year I wanted to try some else as well: roasted summer vegetable dip.

When I was a teenager one of my favorite meals was ratatouille. My mom would make it every summer and I would be in heaven for days (it gets better over time as the flavors continue to mix with each other). One summer we had some friends coming over for dinner and wanted to come up with a quick appetizer. We ended up pureeing leftover ratatouille, spreading it on thin slices of French bread, and toasting it with some fresh mozzarella on top. I thought I had died and gone to heaven.

This recipe is a simplified version of that same deliciousness, because honestly when you are overwhelmed by the amount of produce threatening to go bad on your counter, or by general life craziness, who has time to stand over the stove keeping an eye on the ratatouille? With this recipe you jut roughly chop, throw it in the oven, and puree when everything is cooked. Pretty easy!…

Smoked Salmon Frittata

Each year for Christmas my aunt sends my parents an Irish smoked salmon. If you have never had Irish smoked salmon, you are really missing out. It is a completely different experience from the smoked salmon we eat on bagels.And this year my boys completely fell in love with it. So when we got home from our trip to Colorado the biggest request my boys had from the grocery store was smoked salmon. While I couldn’t give them the Irish kind, I was happy to pick up some of the kind we all know and love.

When I first started shopping and cooking for myself I never bought smoked salmon because I was never able to get through it all in time and it felt like a waste. I would have it on bagels with cream cheese and enjoy it immensely but then I always had more left that I didn’t know what to do with. Years later, as my confidence in the kitchen started to grow, I began playing around with it in different ways and discovered that I loved using it in cooking. It was easy to use and just a little bit added so much flavor (sort of like bacon).

One of my favorite ways to cook with smoked salmon is in a frittata. I love the saltiness and the kick that it adds, plus it pairs nicely with many of my other favorite frittata mix-ins. But the other reason I love smoked salmon frittatas, or any frittata for that matter, is that, along with some crusty bread and a salad, it is a quick, easy, and healthy dinner to get on the table in less than 30 minutes….

Brazilian-Style Fried Rice: Dinner in 7 Minutes

Many moons ago, when my now-husband and I first started dating, we did the thing that many couples do: we tried to increase our appeal by cooking meals for one another. At the time, neither of us cooked very much, so we both fell back on comfort foods that we had grown up with. For me, that was my dad’s Bolognese sauce. For my husband, it was eggs and rice.

When he first told me of his love for eggs and rice I was dumbfounded. Outside of fried rice at Chinese restaurants I had never heard of the combination. And to be completely honest, I thought it sounded absolutely awful. But in the interest of being a good sport with my new boyfriend, I agreed to try it. As I looked down at my plate of rice topped with a fried egg, I was still doubtful. And then I took my first bite and I was blown away! It was delicious, nourishing, and comforting. Simple Grain Salad: A side dish without a recipe

One of the recommendations I often make to clients and in workshops is to “cook once, and eat two, three or more times.” Many times, life can get so busy that meal planning seems impossible and all we can do is try to quickly figure out the next meal—tonight’s dinner, tomorrow’s school lunch, etc. When we do that we are constantly searching for recipes and depending on our creativity, which can quickly burn us out and leave us resentful of having to cook at all. But, with a tiny bit of planning and maybe some flexibility we can turn one round of cooking into two or three simple meals.

One of my favorite ways to stretch the food I make farther is with a grain salad. If I am making a pot of grains—rice, quinoa, millet, couscous, etc.—I always make extra. So much can be done with leftover grains: you can turn them into breakfast porridge, throw them into a big green salad for some added heft, mix them into soups or stews, fold them into veggie burger batter, and, my favorite, turn them into a grain-based salad. Grain salads are great because they can serve as a hefty side dish and are so incredibly flexible—any leftover vegetables, cheese, or salad dressing you have lying around can get thrown in!…

When I was a kid I was a pretty picky eater and the most difficult meal for me (and my poor mom) was breakfast. I hated breakfast. So time and time again my mom would work with me to find some sort of breakfast that I would be willing to eat. Once she found one, then I would go on a major food jag and would only eat that one kind of breakfast day after day after day, until I would get sick of it (I would literally gag at the sight of the food) and refuse to ever eat it again. She must have wanted to kill me some days…

As I got older I began to realize that obsessively eating certain foods was slowly ruining them for me (I still have trouble with Canadian bacon, for instance), so I pushed myself to alternate foods so this wouldn’t happen. As a parent, I have also worked very hard to encourage variety in my boys’ diets so that they don’t grow sick of any one food.

But the recipe that I am going to share with you today is actually what I eat almost every single day for lunch. How is that possible? Because it is incredibly flexible, I just use whatever I have in the house that day, so every day is different!…

Basic Tomato Sauce: A Vehicle for Vegetables

As is true in many households, Italian food is one of our go-to cuisines.  Pastas and homemade pizza are often on our weekly food plan. One of the reasons I like these options so much is that they are very flexible—I can almost always come up with a way to use whatever I have left in the house at the end of the week in an Italian dish of some sort. The leftovers of a meat can be added to a sauce or as a topping for a pizza.  A little bit of ricotta can be used as filling in a pasta or put on pizza. And then there are the veggies as toppings on pizzas, as an extra crunch in a sauce, roasted and mixed in, the possibilities are endless!

And I have learned a trick that enables my Italian obsession: make the sauce ahead of time. There are a number of reasons why this has been such a breakthrough for me: 1) I save a lot of money not buying the jarred tomato sauces, 2) dinner is made a lot faster and there is a lot less stress because I always have the sauce on-hand, 3) I can incorporate a lot more vegetables directly into the sauce than are usually in the jarred stuff, and 4) it tastes SO MUCH BETTER!…
